Quinoa Fried Rice Recipe

Fast, Easy, Yummy!!

Ingredients:
·  2 garlic cloves, minced
·  1 small onion, diced
·  1 cup broccoli
·  1 cup cauliflower
·  1 cup red peppers, chopped
·  1 cup cooked quinoa
·  2 large eggs
·  1 tbsp sesame oil
·  1 tbsp coconut oil
·  1 cup mushroom chopped

Directions:

1            Using a sauté pan, add coconut oil & minced garlic in medium heat for 2 min. Add onions and mushrooms sautéing for another 3 min. Next add, cauliflower, red peppers, and broccoli and cook for 5-7 min. Meanwhile, in another sauté pan scramble 2 eggs and set aside.  In the main sauté pan add the quinoa and stir with the sesame oil, then add the scrambled eggs, and enjoy.
